I make these mini galettes on a regular basis. I love how they are purposely rustic in appearance and filled with flavor. They will satisfy that craving for homemade pie without the added fuss. If you end up having any leftover from the night before, they also taste even better the next morning as a pastry for breakfast!

How to make Mini Nectarine Blackberry Galettes?

Fresh fruit galettes are incredibly easy to make. You simply roll the dough, fill the center with fruit, fold the edges in, then bake.

If you have the time, you could make the puff pastry dough from scratch. I usually buy my butter puff pastry from the frozen aisle at the grocery store, and thaw it in the refrigerator (for about 2 hours) before using.

What I like about making galettes is that you can change-it-up! They can be filled with pretty much any fresh fruit that’s in season. My go-tos are usually stone fruit, such as plums, peaches, and nectarines, and berries.

Once the mixed fruit is in the center of the dough, I start folding the corners of the dough towards the center first. Then pinch the side of the dough together so they stick. Sometimes wetting your fingers with water can help during this process. They don’t have to look perfect! They will come out of the oven looking delightful.

When baking these galettes, I start by baking them in the oven at 400F for about 30 minutes then lower the temperature to 375F until they turn golden brown (about 20-25 minutes). The juices of the fruit will begin to bubble and sometimes pour out along the sides – and that’s ok! The finished product will look and taste delicious!

Mini galettes can be served warm and pair well with ice cream, whipped cream or sweetened yogurt! They also taste wonderful on its own!

Mini Nectarine Blackberry Galettes

Ingredients
  

  • 2 sheets frozen butter puff pastry dough thawed
  • 2 tbsp all-purpose flour
  • 4 nectarines pitted and cut into 1/2 inch wedges
  • 1 cup blackberries
  • 1 tsp lemon juice
  • 3/4 cup sugar
  • 1 tbsp unsalted butter cut into small pieces
  • sugar for dusting over galettes

Instructions
 

  • Roll out dough on a lightly floured parchment paper and cut each sheet into 4 squares.
  • Combine nectarines, blackberries, flour, lemon juice, and sugar, and gently stir.
  • Place fruit in the center of the pastry leaving about 1-inch of dough around the edges.
  • Fold up edges of pastry, pinching the sides of the pastry together. Dot the top of the fruit with butter and sprinkle about a tablespoon of sugar over galettes.
  • Place galette on parchment paper onto a baking sheet and refrigerate for about 30 minutes.
  • Preheat oven to 400F. Bake galette for 30 minutes, then reduce heath to 375F and bake for another 20 minutes or until the pastry is golden. Let galettes cool for about 1 hour before serving.
